Recipe Essentials

For Teriyaki chicken

  • 120 g Chicken tenders, cut into thin strips
  • 2 tbsp Soy Sauce
  • 2 tbsp Mirin
  • 2 tbsp Sake
  • 1 tbsp Brown sugar
  • 1/2 tbsp Garlic,crushed
  • Salt and Pepper, according to taste
  • 1 tbsp oil 

For Donabe Lemongrass Rice

  • 1 seasoned Donabe Pot
  • 1 Cup Japanese Short Grain Rice
  • 1 stalk Lemongrass
  • 1 inch ginger 
  • 1 Lime leaf
  • 1 tsp Sesame Oil
  • Salt

For Garnish

  • 1 Scallion , finely chopped for garnish 
  • 1 tbsp Sesame Seeds
  • 2-3 Baby Bokchoy

Directions

  • Mix Soy Sauce, Sake, Mirin and sugar in a sauce pot and simmer for 12-15 minutes till it gets a saucy consistency.
  • Marinate chicken with salt and pepper for 15 minutes and lightly stir fry them in a pan.
  • Once the pinkness is gone, add 2 tbsp of Teriyaki sauce prepared earlier and toss. When the chicken is coated with the teriyaki glaze all throughout, remove from heat.
  • Wash the rice a couple of times till the water runs clear and drain out the rice on a sieve.
  • Add Water and rice to the Donabe pot in the ration of 1 Cup rice to 1.2 Cup Water.
  • Add Crushed Lemongrass, Ginger, Lemon leaf, sesame oil, salt and use high heat to bring the water to boil.
  • Cook the rice for 10 minutes on low heat.
  • Remove the lemongrass, ginger and lemon leaf and top half the rice with the teriyaki stir fried chicken. Garnish with sesame seeds and chopped scallions 
  • Top it up with some baby Bokchoy and cook for 2 minutes. Let it sit for 15 minutes before digging in and enjoying the deliciousness !

Flavorful Footnotes

  • You can use other proteins and sauces for the stir fry. But do note the teriyaki chicken and lemongrass rice is a match made in heaven.
  • Feel free to add any other toppings like Edamame, rolled eggs, seaweed etc.
  • One can use dashi or any other stock to cook the rice and make it more flavorful.
