Recipe Essentials
For French Toast :
- 4 Brioche Bread Slices
- 4 Tbsp Biscoff Spread, softened
- 2 Tbsp Unsalted Butter, softened
- 2 Eggs, large
- 1 Tbsp Vanilla Sugar
- 3 Tbsp Heavy Cream
- 1/4 tsp Kosher Salt
- 1 tsp Vanilla Extract
For Cardamom Mascarpone Whipped Cream :
- 2 oz Mascarpone Cheese
- 1 Tbsp Granulated Sugar
- 1/4 Tsp Cardamom Extract
- 1/2 Cup Heavy Cream
For Plating :
- 1/3 Cup Strawberries, sliced
- 1/2 Cup Maple Syrup
- Mint Leaves,optional
Directions
French Toast :
- Cut the edges of a Brioche Breads and set aside.
- Smear Biscoff Spread across a bread and top it up with another bread.
- Cut the bread sandwich into 4 pieces.
- Whisk Eggs, Heavy cream, vanilla sugar, vanilla extract and salt to combine.
- Dip the mini Biscoff sandwich into the egg mixture and fry on a buttered pan till cooked.
Cardamom Mascarpone Cream :
- In a chilled bowl combine mascarpone cheese and sugar on a high speed until completely combined.
- Add Cardamom extract and heavy cream, and mix on a low setting until almost combined. Now increase speed to high and whip until stiff peaks form. Transfer into a piping bag for use .
Plating :
- Place the toasts on a plate. Pipe rosettes of the cardamom cream across the plate, between the toast bites.
- Add strawberries as across the plate to make it cohesive.
- Add edible flowers and mint leaves as garnish.
- Sprinkle powdered sugar across the toast bites.
- Pour maple syrup and dig in !
Flavorful Footnotes
- Spreads like Nutella, Peanut Butter, Almond Butter etc can be used instead of Biscoff. But trust me when I say,Biscoff is going to be the best pairing !
- Fresh cream can be used instead of Cardamom Mascarpone Cream.
- You are totally welcome to use other berries and edible flowers of your choice.
