Crispy Enoki Fritters

Recipe Essentials 

  • 200g Enoki Mushrooms, sliced into thin layers 
  • 1 Cup All Purpose Flour
  • 1/3 Cup Rice Flour
  • 1 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • Salt and Pepper, per taste
  • Oil, for frying
  • 1/2 tsp Sesame Seeds, for garnish
  • 1  Scallion greens , finely chopped for garnish 
  • 3 tbsp Mayonnaise 
  • 1 tbsp Sriracha Sauce
  • 1/4 Lemon, squeezed

Directions

  • Wash the mushrooms, nip the roots and slice it into multiple thin flat layered chunks. 
  • Whisk together Mayonnaise, Sriracha, lemon juice and garlic powder to make a creamy sriracha mayo dip and set aside.
  • Make a batter by whisking together All Purpose Flour, Rice Flour, Paprika, Garlic Powder, Onion Powder, Salt, Pepper and water. The batter shouldn’t be too thick or too thin.
  • Dip each sliced mushrooms chunk into the batter and deep fry for 3-5 minutes flipping in between. Once golden and crispy, take it off on to a paper towel.
  • Plate the fritters. Sprinkle some salt, pepper, sesame seeds and finely chopped scallion as garnish.
  • Dunk the crispy fried enoki fritters into the dip and be ready to take your taste buds to a carnival !

Flavorful Footnotes

  • Rice flour can be substituted with cornflour or potato starch.
  • Feel free to sprinkle any spice blend on the fritters just after taking them off oil to add a spicy twist.
  • Tastes as good with Sweet Chilli , Ketchup or any other dipping sauce.
